Assorted Frozen or Fresh Veggies Ingredients:

One package of Cauliflower Broccoli Frozen Veggies, one bunch of fresh herbs (basil is what I used).

A regular size thin cedar plank worked for this about 12" long. 

After preparing the hot plank add a bed of fresh herbs on the top of the plank and then add the defrosted veggies on top of that.  Cook until the veggies are tender crisp.

Corn and Potatoes Ingredients

4 potatoes, 1 cup frozen or canned corn, 2 green onions, 1 teaspoon fresh or moistened herbs of your choice and olive or vegetable oil.

Works great on any plank type.

Slice potatoes thin and coat with oil.  Arrange on prepared grilling or oven plank. 

Add corn, green onions, herbs and season to taste.  Grill until potatoes are tender.

Grilled Squash Ingredients

1 squash, butter, about 1/4 cup brown sugar, several tablespoons syrup or honey.

Prepare squash and cut into slices or chunks.  Nuke the squash for a few minutes and place on prepared cedar plank.  Mix the rest of the ingredients and pour over the planked squash.

Grill until squash is tender and additional ingredients are caramelized.

Excellent when using cedar planks.  The planks keep the corn from caramelizing to much.  It comes out super soft and full of flavor.

Prep planks in water for up to 4 hrs.

  • Ingredients:
  • Corn On The Cob
  • Olive oil
  • dried thyme
  • crushed or powered garlic
  • course salt and pepper

Husk the corn and sprinkle all the ingredients over the corn to your taste.  Preheat the cooking surface of the planks on the grill and place the ears of corn on the planks.  Close the lid and smell the aroma.  It will only take about 20 min. or so for the corn to become tender crisp and ready to eat.  A little melted seasoned butter on the table will be welcomed by all.

These do not take up much room on the grill, they can be added in addition to your main meat entree if your timing is OK.

One of the best veggie side dishes at our back yard cook outs is planked peppers.  They seem to compliment what ever main meat entree I have chosen to serve.  They take about 45 min to cook so I judge the placement on the grill to finish cooking when the main entree is done also. 

I have one member of the family that chooses to eat just the stuffed peppers.  They get an extra large serving.

  • Ingredients for 2 side dishes:
  • 2 large any color peppers with tops cut off and cleaned
  • 1/8 cup fresh green onion tops or chives chopped
  • 1 tablespoon minced fresh or jar garlic
  • A little infused or plain olive oil
  • 3/4 cup uncooked orzo pasta
  • 1/2 to 3/4 cup fresh spinach (chopped or not)
  • About 1/2 cup veggie or chicken broth
  • A little Italian ( any flavor) salad dressing

In a med. sauce pan add the onion and garlic with the oil and cook a few min. then add all the other ingredients and continue to cook until the pasta has absorbed the liquid and begins to brown.  Add the mixture to your peppers and place on a soaked and prepared cedar plank on your grill, close the lid and cook until the peppers are tender crisp (about 45 min).  Serve and enjoy.
